  • Step 1: Establishment of the HACCP team and appointment of a team leader
  • Step 2: Product description
  • Step 3: Identification of the intended use of the product
  • Step 4; Establishment of the manufacturing diagram and on-site verification
  • Step 5: Hazard identification (Principle 1)
  • Step 6: Implementation of mastery measures
  • Step 7: Determination of Critical Control Points (CCPs) (Principle 2)
  • Steps 8: Determination of critical limits for each CCP (Principle 3)
  • Steps 9: Monitoring system for each CCP (Principle 4)
  • Step 10: Implementation of corrective actions for CCP (Principle 5)
  • Step 11: Control of a non-compliant product
  • Step 12: Notification and withdrawal (Will be processed in PRP)
